- 1 egg
- 350 g T45 flour
- 60 g Sugar
- 230 g Mascarpone cheese
- 20 g Butter (melted)
- Zest of 1 Lemon
- 30 g Rum
- One / two teaspoons of baking powder
- Icing sugar
- Cinnamon powder (optional)
Steps for making mascarpone doughnut
In the bowl of a food processor or in any bowl, pour the flour, whole egg, sugar, mascarpone, melted butter, rum, lemon zest and yeast and work the mixture (by hand or with the leaf whisk) until it is smooth.
Shape the doughnuts quickly.
Flour your hands, remove a small piece of dough and, on a lightly floured sheet of baking parchment, shape it into a small doughnut. Then close the dough roll over itself to form a doughnut.
Repeat the procedure for all the doughnuts.
Pour plenty oil into a high-sided pan and heat well.
Fry a few doughnuts at a time, over medium/low heat, until golden.
Using a slotted spoon, drain the doughnuts and place them on a paper towel-lined plate.
In another plate, pour sugar and add a pinch of cinnamon to taste. Stir to combine.
Dip the doughnuts, still warm, in the sugar to coat all sides.
Serve the mascarpone doughnuts immediately or store them in an airtight container until ready to serve.
